For the year of 2025, my NY resolution is to eat healthy with less sodium, as inspired by Pinch of Yum since I am a former teacher and full time foodie blogger. I am writing about a seafood seaweed pancit noodle recipe as well as writing my fantasy fan fiction novel. So this is the recipe for pancit:

'wonton (noodles)') or 便的食 (Pe̍h-ōe-jī: piân-ê-si̍t/pân-si̍t; lit. 'convenient food').[6] In the Filipino language, pansít is the generic word for noodles.[7] Different kinds of noodles can be found in Filipino supermarkets which can then be cooked at home. Garlic Shrimp & Squid Ball Pancit with White Mushrooms, Napa Cabbage, and Julienne Carrots
This Filipino-inspired noodle dish is packed with flavor from garlic shrimp, squid balls, and a mix of fresh vegetables, including white mushrooms, napa cabbage, and julienne carrots. A delicious, savory, and satisfying dish perfect for any occasion.
Ingredients:
For the Shrimp & Squid Ball:
1/2 lb shrimp, peeled and deveined
1/2 lb squid, cleaned and chopped
1/2 cup breadcrumbs
1 egg
1 tablespoon fish sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder (optional)
1 tablespoon chopped fresh parsley (optional)
For the Pancit:
8 oz pancit noodles (you can use rice noodles or egg noodles)
2 tablespoons vegetable oil
1/2 lb shrimp, peeled and deveined
12-15 squid balls (store-bought or homemade)
2 tablespoons minced garlic
1 small onion, finely chopped
1/2 cup white mushrooms, sliced
1 cup napa cabbage, thinly sliced
1 medium carrot, julienned
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 tablespoon fish sauce
1/2 teaspoon sesame oil (optional)
2 cups chicken broth (or water)
Salt and pepper, to taste
Lemon wedges (for serving)
Instructions:
1. Make the Shrimp & Squid Ball:
In a food processor, combine the shrimp, squid, breadcrumbs, egg, fish sauce, salt, pepper, and garlic powder. Blend until smooth and well combined.
If the mixture is too wet, add a little more breadcrumbs to help form the balls.
Roll the mixture into small balls, about 1 to 1.5 inches in diameter. You should get around 20-25 squid balls.
Heat a small pot of water over medium heat, and once it’s simmering, gently drop the squid balls into the water. Let them cook for about 4-5 minutes or until they float to the surface. Remove from the water and set aside.
2. Prepare the Pancit:
Cook the pancit noodles according to package instructions. Drain and set aside, reserving a little of the cooking liquid.
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and chopped onion, sautéing until fragrant and soft (about 2-3 minutes).
Add the shrimp to the pan and cook until they turn pink, about 3 minutes. Remove the shrimp from the pan and set aside.
In the same pan, add the squid balls and cook for about 2-3 minutes, letting them brown slightly. Set aside with the shrimp.
In the same pan, add the sliced white mushrooms and cook for 2-3 minutes, until softened.
Add the julienned carrots and napa cabbage, stirring frequently for another 2-3 minutes until the vegetables start to soften but remain vibrant and crisp.
Return the shrimp and squid balls to the pan, and then add the cooked pancit noodles. Pour in the soy sauce, oyster sauce, fish sauce, and chicken broth. Stir well to combine, letting the noodles soak up the flavors. Add the sesame oil for a hint of nuttiness.
Cook for another 3-4 minutes, tossing the ingredients together, until everything is heated through and the noodles have absorbed the sauce. Adjust seasoning with salt and pepper to taste.
3. Serve:
Transfer the garlic shrimp and squid ball pancit to a large serving platter.
Garnish with fresh herbs like parsley or green onions if desired.
Serve with lemon wedges on the side for a burst of freshness.
